Today I have the pleasure of introducing one of my students here in Spain, Juan Salas, a sixteen year old, born and raised here in Logroño. Here on Bicontinental.co, he has entrusted us with the treasure of one of his grandmother’s famous recipes. Below he will tell you all about it. Thanks Juan! “Rice pudding is a typical recipe here in Spain. I’ve made it a lot of times with my grandma, who showed me how to do it.
A couple of months ago I started to make different desserts, and I decided to ask my grandma the recipe of rice pudding because in my house we like it a lot.
Now it has become one of my favorites recipes to do because it is easy to make and you can buy all the ingredients in a supermarket near you. Perhaps it isn’t the most exciting dessert that you will make in your life but you won’t regret it.”
Ingredients for 10-12 servings:
- 1 cup of rice
- 2 liters of whole milk
- 10 or 11 table spoons of sugar
- 1 stick of cinnamon broken into pieces (about 4)
- Lemon peel of ¾ of a lemon
Recipe:
First you will need to turn on high heat, then put all ingredients except the sugar in a large pot and wait for the milk to boil.
When the milk starts to boil lower the heat to medium and add the sugar. (Tip: Don’t stop stirring!)
Let the milk boil again turning the heat to high. When the milk starts to boil again, lower the heat to medium and wait until the rice is soft (probably 15 to 20 minutes). When the rice is soft, remove the pot from the fire and let it cool.
After cool, put it the fridge for at least 1 hour. Serve chilled. (Optional: Add some ground cinnamon on the top.)
